Seafood Processing in the 21st Century U.S

In the coming years, we will see changes in how seafood is acquired, processed, and provided to the market.  These changes will be the result of new fisheries management policies (including a growth in aquaculture), alteration of consumer preferences, and a re-shuffling of the world economy. This paper will examine some of these changes, the challenges they hold for seafood processors, and how these challenges might be dealt with.
